Conscious Eating by Gabriel Cousens, M.D. This over 800 page book covers the entire spectrum of nutrition and is an extremely valuable addition to any library. I frequently reference this book for information and recipes. Gabriel has done a tremendous service to humanity by providing this book. If you are interested in reading a book on nutrition that can help you reach individualized radiant health, then I believe Conscious Eating could be for you. Gabriel is an incredibly wise and compassionate guide. He inspires you to take a journey with him and gives support along the entire path. The first section of the book invites the reader to look at nutrition in a holistic manner, and gives ways to commune with food on a deeply mindful level. Then Gabriel outlines the various ways that we can individualize our diet to our particular metabolic uniqueness. Detailed charts are given to help you find your metabolic type and specific dietary suggestions are shown for each type. There are also sections on Ayurveda and blood type to further assist in the individualizing process. The second section of the book goes into great detail on the health benefits of plant foods. Gabriel's insights into conscious eating are rooted in a strong belief in veganism. For anyone considering going vegetarian or vegan, this book outlines everything you would need to know on how to successfully eat this type of diet. There is also considerable attention given to the role that veganism plays towards environmental sustainability. Readers will find these sections to be very well researched and invaluable as reference material. The third section of the book covers the "how to" of transitioning to a healthier diet and also has fascinating chapters such as on the benefits of living and raw foods. Gabriel breaks down several important steps along the transition process so that anyone can benefit from the insights in this book.
